Ah, banana bread oatmeal. I make this quick, easy, and yummy breakfast at least once a week. It is so easy and everyones happy. When I say everyone, I mean myself and the kids. My husband doesn't eat breakfast during the week. He leaves for work at 4:45 in the morning, and doesn't want to eat breakfast. So he only eats breakfast on the weekends.
I use unsweetened almond milk instead of water in oats, I think it gives better flavor, and adds a little bit more nutrients. And I add all the seasonings before I add the oats, so the flavors can cook into the oats.
You can go ahead and mash the banana while you wait for the milk to start to boil.
Add in the oats once the milk stars boiling. Bring it up to a boil and turn it down a little. Cook it for a few minutes, stirring about every 30 seconds. Add in the mashed banana and let it cook a few more minutes until it to the consistency you like.
1 3/4 cup unsweetened almond milk
1/4 tsp sea salt
1/8 tsp ground allspice
1 tsp cinnamon
1 tsp vanilla
1/2 Tbsp agave
1 cup old fashioned rolled oats
1 medium banana
Directions:
Put the milk in a saucepan over medium heat. Put the salt, allspice, cinnamon, vanilla, and agave in the milk, stir. When the milk starts to boil, pour in the oats and stir. When it starts to boil, reduce heat to medium low, closer to medium. Stir every 30 seconds for about 4 minutes, until it begins to thicken. Mash banana and stir in. Let it thicken to the texture you prefer and put into bowls and enjoy. This makes 2 servings, or in my house, 1 adult serving and 2 child servings.
